After missing the chance to visit Hostellerie Le Fox, I looked forward to discovering Stéphane Buyens' new restaurant, Subtiel. While the cuisine showed promise and creativity, several shortcomings in service and execution prevented the experience from fully meeting expectations. A promising start, but with room for improvement.

Ultimately, the spectacular sunset views leave a stronger impression than the cooking itself, making the location the restaurant’s greatest asset.
