Vista

in Willemstad – Netherlands

Tucked along the banks of the Hollands Diep, in the charming town of Willemstad, lies Vista—a refined culinary destination with a story that extends far beyond the plate. Since opening in 2016, Vista has become the life’s work of chef Henrie van der Heijden and his wife Ingrid, who manages the front of house. The couple met in the hospitality world and honed their skills in prestigious kitchens, including Amarone in Rotterdam. In 2011, they opened their first restaurant together—’t Raadhuis in Heinenoord. But as their ambitions grew, so did the need for a new space. They found it in Willemstad, where Vista took shape.

Vista is more than just a restaurant; it’s a reflection of Henrie and Ingrid’s shared passion for hospitality, craftsmanship, and entrepreneurship. Henrie leads the kitchen, while Ingrid ensures a warm and polished guest experience. Now joined by their children, the team has created a true family affair—founded on deep professional expertise and heartfelt dedication to the craft.

During my visit, I enjoyed a beautifully curated seven-course tasting menu that showcased both creativity and finesse. Among the highlights were three courses that stood out in particular. The meal began with a refined appetizer of marinated tuna paired with fennel, umeboshi, and razor clams—a fresh and vibrant start. Midway through, a grilled fillet of sea bass arrived, served with mussels, artichoke, zucchini, parsley, Hollandaise, and a paella-inspired sauce. The hint of saffron in the sauce evoked a sweet memory of my grandmother’s rice pudding, delicately spiced in just the same way. Dessert brought a vivid plate of “Peach & Raspberry” in various preparations, accompanied by a nut crumble, honey, and cardamom. What truly elevated it was a quenelle of vanilla ice cream, gently infused with star anise—a subtle note that lingered beautifully.

That said, a few minor critiques are worth mentioning. The roasted duck breast, served with green pea and asparagus mousse, girolles, and chipotle jus, lacked cohesion and felt somewhat disjointed as a complete dish. While the staff were friendly and knowledgeable, service could have been more attentive—plates were often cleared in silence, and most interaction came only when initiated by guests. Additionally, the dining room was a bit loud, likely due to the high energy and enthusiasm of fellow diners.

Still, these are small blemishes on an otherwise memorable experience. Vista’s inventive flavors, heartfelt service, and picturesque waterside setting make it a standout destination—one that leaves a lasting impression.
