Uliassi

Senigallia – Italy

Uliassi: A Seaside Temple of Culinary Art
Perched along the Adriatic coastline in the charming town of Senigallia, Restaurant Uliassi has evolved from a modest beachside café into one of Italy’s most celebrated gastronomic destinations. Founded in 1990 by siblings Mauro and Catia Uliassi, the restaurant began as a simple wooden structure near the harbor. Over the years, it has undergone thoughtful renovations, each marking a new chapter in its journey while preserving its essence as a family-run haven by the sea.
Mauro Uliassi’s path to culinary mastery was shaped by both tradition and exploration. Born and raised in Senigallia, he first helped in his parents’ bar before pursuing culinary studies and eventually teaching at the local hotel management school. His formative experiences included summers on the Riviera Romagnola and a pivotal stint at Fauchon in Paris, where his curiosity and commitment to craft deepened. That spirit of experimentation remains central to Uliassi today, embodied in the restaurant’s annual research lab—a period of closure dedicated entirely to innovation.

Recognition soon followed. Uliassi earned its first Michelin star in 1994, a second in 2008, and ultimately the coveted third star in 2018. Yet despite its accolades, the restaurant remains a family affair: Catia gracefully leads the front of house, while Mauro’s son Filippo contributes as sommelier. Together, they shape a dining experience that reflects their shared history, their hometown, and a lifelong devotion to hospitality.

A Sanctuary by the Sea
Dining at Uliassi feels less like entering a restaurant and more like stepping into a sanctuary. Guests often describe it as an oasis of calm, almost a Buddhist temple, where understated kindness sets the tone. Plates arrive not merely as dishes but as artworks, each one meticulously composed to surprise and delight.

An alternative pre-dessert—crafted without alcohol—evoked deep emotion. A subtle touch of saffron transported me back to childhood memories of my grandmother’s rice pudding, a moment of nostalgia woven seamlessly into haute cuisine. This ability to stir memory and emotion is part of Uliassi’s quiet magic.

Despite the breadth of the menu, there is a remarkable lightness to the progression of courses. Small intermezzi sharpen the palate, encouraging you to continue tasting without ever feeling overwhelmed. Flavors remain pure and precise, yet just when you think you’ve grasped the essence of a dish, a new texture or a sudden burst of flavor appears—a delicate surprise, a taste bomb that keeps curiosity alive.

The Art of Hospitality
What makes Uliassi extraordinary is not only its technical brilliance but its emotional resonance. It is a place where innovation meets memory, where the Adriatic breeze mingles with saffron and sea herbs, and where hospitality feels both refined and deeply personal. Mauro, Catia, and Filippo have created more than a restaurant—they have built a living narrative of family, place, and passion.
For fine-dining lovers, Uliassi is not simply a destination; it is a pilgrimage. A visit here is a reminder that the greatest meals are not only about flavor, but about the stories they carry, the emotions they awaken, and the quiet moments of joy they leave behind.
