Modest

in Opglabbeek – Belgium

In the quiet town of Opglabbeek, nestled in the Limburg countryside, Restaurant Modest has carved out a unique identity since opening its doors in February 2022. The restaurant occupies a sleek, modern building on the Weg naar Opoeteren, where its minimalist architecture contrasts beautifully with the surrounding greenery. Inside, the space is designed with a contemporary flair, offering a calm and intimate setting that reflects the philosophy behind its name.

At the helm is chef and owner Sander Spreeuwers, a native of Opglabbeek whose culinary journey began at the prestigious Hotelschool Ter Duinen in Koksijde. During his training, Sander earned the nickname “Modest,” a nod to both a television character and his father’s role as the town’s former mayor. The name stuck, and it now defines the spirit of his restaurant. Sander’s experience spans some of the world’s most acclaimed kitchens, including internships at De Librije in the Netherlands, Tickets and El Celler de Can Roca in Spain, and a five-year tenure at the three-starred Hertog Jan in Zedelgem under chef Gert De Mangeleer. Before launching his own venture, he also worked as a freelance chef across various restaurants in and beyond the province.

In 2025, Restaurant Modest was awarded its first Michelin star, a recognition that celebrates the restaurant’s distinctive identity and the chef’s thoughtful, refined approach. For Sander, the star is not just a milestone but a quiet affirmation of the values that have guided him from the beginning.

Restaurant Modest is more than a name—it’s a reflection of Sander’s grounded approach and his deep connection to the place he calls home.
