Melchior: A Culinary Canvas in the Heart of Tienen
Tucked away in a 16th-century building on the Veemarkt in Tienen, Restaurant Melchior is more than a dining destination—it’s a living expression of vision, transformation, and personal ambition. The historic brickwork and soaring ceilings whisper of the past, while the vibrant, contemporary interior speaks boldly of the present. It’s here that chef Gilles Melchior, known for his quiet intensity and rebellious edge, has brought his long-held dream to life.
Gilles’ culinary journey began humbly in his grandfather’s butcher shop, where he first grasped the foundational importance of ingredients. That early spark led him through formal training and into the kitchens of Belgium’s finest establishments—Hof van Cleve, Luzine, and Arenberg—each shaping his eclectic style and sharpening his creative instincts. In 2017, he opened Melchior, not merely as a restaurant, but as a personal canvas for his evolving philosophy.
The Experience: Menu Meets Mastery
During our visit, we opted for the six-course tasting menu, a journey through refined flavors and textures. Highlights included tuna, salmon, gambero rosso, and a standout langoustine, followed by a main course featuring Label Rouge chicken—a nod to quality and ethical sourcing.
For dessert, the choice was clear: the “à la minute” Dame Blanche, where diners can select one, two, or three scoops. Naturally, we went for three. It’s indulgent, nostalgic, and executed with finesse.
What sets Melchior apart is its flexibility. My dining companion chose à la carte—a rare luxury at a fine-dining table where tasting menus often reign supreme. Even more impressively, she was able to select just two starters. One of them, a langoustine with linguini, oscietra caviar, and a sauce infused with sea urchin, was nothing short of revelatory. That briny, umami-rich depth lingered long after the bite, even from the small taste I managed to steal.
I’m already planning a return visit—this time, I’ll “limit” myself to that exquisite langoustine and finish with the Dame Blanche. Sometimes, simplicity is the ultimate sophistication.
The Wines: Passion in Every Pour
The sommelier deserves special mention. His pride in the wine selection was palpable, sharing stories of grapes, terroir, and vintages with infectious enthusiasm. It’s rare to encounter such genuine passion, and it elevated the entire experience.
