La Paix

in Anderlecht – Belgium

Located in Anderlecht, one of Brussels’ most historic and multicultural districts, La Paix has been a landmark of the local hospitality scene since 1892. Situated opposite the famous Anderlecht slaughterhouses, the restaurant is deeply woven into the history and identity of the neighborhood. Over generations, it evolved from a traditional family establishment into one of Belgium’s most prestigious gastronomic addresses while never losing its connection to its roots.

Since 2004, La Paix has been led by Chef David Martin and his wife Nathalie Obbiet. Born in France into a Basque family, David Martin built his culinary foundation through a series of prestigious experiences before settling in Belgium. During his early career, he worked alongside renowned French chef Alain Passard, an experience that profoundly shaped his vision and approach. He later continued his journey within the Le Méridien hotel group, refining his skills through international assignments across Europe. What initially started as a professional opportunity in Brussels ultimately became the place where he would establish his culinary legacy.

Together with Nathalie Obbiet, whose family had long been associated with La Paix, David Martin embarked on a transformation of the historic restaurant. While David focused on shaping the restaurant’s identity and vision, Nathalie became the driving force behind the dining room and guest experience. Their partnership successfully blends innovation with continuity, preserving the restaurant’s heritage while ensuring its ongoing evolution. Today, La Paix stands as one of Belgium’s most celebrated fine dining institutions and proudly holds two Michelin stars.

La Paix is widely recognized for Chef Martin’s highly personal style, inspired by his travels and particularly by Japanese culture. This influence can be found throughout the restaurant’s philosophy and has become an integral part of its identity. Rather than following trends, David Martin has developed a distinctive approach that reflects both his international background and his own creative vision.

My visit quickly demonstrated why La Paix enjoys such a strong reputation. Contrary to my expectations of a menu gradually building towards a grand finale, the experience started at an exceptionally high level and maintained that standard throughout. There was no single defining peak; instead, every course contributed to a consistently impressive and cohesive journey.

Several dishes left a particularly strong impression. The Sômen minute with Mala sauce showcased remarkable precision and balance. Equally memorable was Chef Martin’s signature lemon stuffed with stracciatella, fresh tartare of langoustine, yuzu, caviar, and a subtle touch of miso, a creation that perfectly illustrates his personal style and influences. The puffed potatoes with fudge and blue vanilla provided yet another memorable moment during the meal.

One amusing detail shared during the experience concerns Chef Martin’s desserts. Apparently, chocolate never appears in his creations because his wife Nathalie does not like it. Whether entirely true or not, it is a charming anecdote that reflects the close partnership at the heart of La Paix. Love, it seems, sometimes has the final say in the kitchen.

The service team further elevated the experience with their warm hospitality and unmistakable Belgian sense of humor. Their relaxed professionalism helped create an atmosphere that felt both refined and welcoming.

There was, however, one small disappointment. Despite the limited number of occupied tables during the service, Chef David Martin did not visit the dining room to greet guests. The reason soon became apparent: he was not present in the restaurant that day. While this did not diminish the quality of the experience itself, it felt like a missed opportunity, particularly at a restaurant so closely associated with the personality and vision of its chef.

Even so, La Paix remains one of Belgium’s most distinctive dining destinations. Combining a rich history, a unique culinary identity, and the dedication of David Martin and Nathalie Obbiet, it continues to be a compelling address for anyone interested in experiencing one of the country’s leading fine dining institutions.
