in Valletta – Malta

ION Harbour by Simon Rogan is a distinguished restaurant located in Valletta, Malta. Situated on the rooftop of Iniala Harbour House, it offers panoramic views of the Grand Harbour, blending history with contemporary refinement. The restaurant is named after the iconic harbor it overlooks, reflecting its deep connection to the island’s rich maritime heritage.

Simon Rogan, a celebrated British chef, is known for his commitment to hyperlocal and seasonal ingredients. His culinary journey began with the opening of L’Enclume in the Lake District in 2002, a restaurant that has since earned three Michelin stars. Over the years, he has expanded his influence, establishing award-winning restaurants in London, Hong Kong, and now Malta. His approach is guided by sustainability, working closely with local producers to create menus that highlight the best of each region.

ION Harbour first opened its doors in November 2020, quickly earning recognition for its dedication to craftsmanship. In 2023, Simon Rogan took over the restaurant, bringing his farm-to-table philosophy to Valletta. Under his leadership, the restaurant became Malta’s first two Michelin-starred establishment, marking a significant milestone in the country’s fine dining scene.

A few months before my trip to Malta, I made a dinner reservation at ION Harbour, unaware of the changes that were about to take place. When we arrived, we had to wait briefly in the lobby of the Iniala Harbour House hotel, where a short film was playing. As I watched, I noticed Simon Rogan’s name associated with the restaurant. It turned out that, between the time I had made my reservation and the date of our dinner, he had taken over ION Harbour. As someone already familiar with his work—his three-star restaurant L’Enclume in Cartmel (Cumbria, UK) had been on my radar for some time—this was an unexpected but exciting discovery.

Once seated, or rather, settled onto the terrace, we were greeted by a magnificent view over the port of Valletta. The scenery constantly shifted as the evening progressed, making the experience all the more special. The menu featured a variety of vegetables, pork, fish—each dish thoughtfully composed to complement the overall setting.

A few days after our dinner, I received an unexpected phone call from ION Harbour. To my surprise, they were reaching out to apologize. They had forgotten to deduct the deposit from my final bill and wanted to ensure it was refunded to my credit card. I hadn’t even noticed the oversight, yet their proactive approach demonstrated a level of service that was truly commendable.

ION Harbour combines history, craftsmanship, and impeccable hospitality in a setting that is as stunning as it is refined. The restaurant’s ability to evolve while staying true to its values makes it a memorable destination in Malta’s fine dining scene.
