Lunch at Hēdonē: A New Culinary Star Rises in Tongeren

Belgium’s fine-dining landscape continues to evolve, and every now and then a restaurant appears that immediately feels destined for greater things. Hēdonē, located in Tongeren, is one of those rare discoveries. Combining refined cooking, excellent produce, and a clear culinary identity, it delivers the kind of experience that leaves a lasting impression long after the final course has been served.

At the heart of Hēdonē is chef Davine Croughs, who runs the restaurant together with host and sommelier Nicholas Neve. Together, they have created a highly personal dining experience centred on craftsmanship, seasonality, and hospitality. The restaurant takes its name from the ancient Greek goddess of pleasure and sensory enjoyment, and that philosophy is evident throughout the meal.

A Promising Start

Our lunch began with a series of amuse-bouches that immediately set the tone for the afternoon. A delicate cornet filled with refreshing tuna provided an elegant opening, balancing crisp texture with clean maritime flavours.

Yet it was another amuse that truly stole the show: a preparation featuring jalapeño. In an era where many fine-dining establishments still play it safe with seasoning, it was refreshing to encounter a kitchen willing to embrace a touch of heat. The spice was not there for shock value; it was carefully integrated and beautifully judged, adding excitement and energy to the dish.

Honestly, more restaurants should dare to do this. Fine dining does not have to mean restrained flavours. When applied with skill and precision, spice can elevate a dish just as effectively as acidity or sweetness. Hēdonē clearly understands this balance, and the jalapeño amuse became one of the most memorable bites of the entire lunch.

Precision Through the Course Menu

As the menu unfolded, a clear pattern emerged. Each course demonstrated the kitchen’s ability to pair excellent fish or meat with meticulously prepared vegetables. Rather than treating vegetables as supporting actors, they played an integral role in every composition.

This approach reflects a modern philosophy that many of today’s most exciting chefs are embracing. The protein may provide the centrepiece, but the surrounding vegetables give the dish its personality, nuance, and sense of seasonality.

What impressed most was the consistency. Every course offered a different flavour profile and character, yet each remained remarkably fresh and balanced. There was a sense of restraint and confidence throughout the menu. Nothing felt overly manipulated or burdened with unnecessary complexity. Instead, each ingredient seemed to have a clear purpose.

The fish dishes showcased both technical precision and respect for the product. Textures were carefully considered, sauces were refined without becoming dominant, and garnishes contributed meaningful flavours rather than merely decorative touches.

The meat courses followed the same philosophy. Perfectly cooked proteins were paired with vegetables that had been given as much attention as the main ingredient itself. This balance helped maintain a sense of lightness throughout the meal and prevented the menu from becoming heavy, despite its obvious gastronomic ambition.

A Chef Worth Watching

After experiencing the lunch menu, it becomes easy to understand why Davine Croughs was nominated for Lady Chef of the Year. While the competition results were still unknown at the time of our visit, the nomination alone feels entirely justified.

What stands out most in her cooking is not a desire to impress through technical showmanship alone. Rather, she demonstrates a clear understanding of flavour combinations and an ability to create dishes that feel both sophisticated and approachable.

Many talented chefs can execute technically demanding plates. Far fewer can create menus that maintain excitement from the first amuse to the last course while still preserving elegance and coherence. At Hēdonē, that balance is achieved with apparent ease.

There is also a noticeable maturity in the cooking. The dishes never feel forced or trend-driven. Instead, they communicate confidence, a strong culinary vision, and a genuine respect for ingredients.

Hospitality and Atmosphere

Fine dining is never just about the food, and Hēdonē understands this perfectly. The restaurant combines gastronomic ambition with a welcoming atmosphere that avoids pretension.

The dining room strikes a pleasing balance between contemporary elegance and comfort. Guests are made to feel at ease from the moment they arrive, allowing the focus to remain where it should be: on enjoying the experience.

Meanwhile, Nicholas Neve provides attentive service and thoughtful wine recommendations that complement the kitchen’s creations. The collaboration between chef and host feels seamless, contributing to the impression that Hēdonē is genuinely a joint project built on shared passion and expertise.

A Well-Deserved Recognition

The wider culinary world has already begun to take notice. Gault&Millau Belgium recognised Hēdonē as its Discovery of the Year in Flanders, praising both the culinary execution and the overall concept. The guide highlighted the experience and expertise that Davine Croughs and Nicholas Neve bring to their restaurant.

Likewise, the restaurant has attracted attention from the MICHELIN Guide, further reinforcing the notion that Hēdonē is a destination worth watching closely.

Final Verdict

Greater Tongeren has gained a genuine culinary asset.

Hēdonē is not merely another ambitious restaurant attempting to make a mark on Belgium’s competitive gastronomic scene. It already feels like a mature and fully realised concept. From the outstanding selection of amuse-bouches to the beautifully balanced fish, meat, and vegetable combinations, every aspect of the lunch demonstrated skill, attention to detail, and a strong sense of identity.

Most importantly, the meal was enjoyable. The dishes were refined without becoming overly intellectual, creative without sacrificing flavour, and elegant without losing warmth.

The jalapeño amuse alone deserves applause for showing that fine dining can still surprise and challenge guests in subtle ways. Combined with the consistently high quality of the subsequent courses, it helped create a lunch that was memorable for all the right reasons.

If Hēdonē continues on its current trajectory, this will almost certainly not be the last accolade heading its way. For lovers of modern gastronomy, it represents one of the most exciting dining destinations in Limburg today, and a restaurant that is fully deserving of the growing attention it is receiving.
