in Tokyo – Japan
Tucked away in the heart of Tokyo’s Ginza district, Ginza Fukuju has quietly cultivated a legacy that spans generations. Originally established in the post-war era, the restaurant began as a modest counter-style eatery serving traditional Japanese fare to local artisans and businessmen. Over time, it evolved into a refined culinary institution, preserving its roots while embracing the rhythms of modern Tokyo.
At the helm is Chef Hiroshi Yamaguchi, a third-generation chef whose family has been intimately tied to the restaurant since its inception. Trained in Kyoto and Paris, Yamaguchi brings a deep reverence for Japanese technique alongside a nuanced understanding of international culinary traditions. His journey began under the guidance of his grandfather, the original founder, and continued through apprenticeships in kaiseki kitchens and European fine dining establishments. Today, he leads Ginza Fukuju with a philosophy that honors craftsmanship, seasonality, and quiet hospitality.
