in Kraków, Poland
Tucked away on Bocheńska Street in Kraków’s historic Kazimierz district, Bottiglieria 1881 occupies a special place in the city’s fine-dining landscape. Far from the crowds surrounding the Main Market Square, the restaurant sits among the atmospheric streets and cultural heritage that define one of Kraków’s most characterful neighbourhoods. Over the years, it has become an integral part of the city’s contemporary gastronomic identity while remaining rooted in the unique spirit of Kazimierz.
At the helm is chef and co-owner Przemysław Klima, one of the most influential figures in modern Polish gastronomy. Born in Kraków, he began his culinary career locally before moving on to some of Poland’s most respected restaurants, including Ancora, Senses and Atelier Amaro. Seeking broader experience, he later trained in Copenhagen at internationally renowned establishments such as Noma and Kadeau. These formative years helped shape his professional outlook and laid the groundwork for the career that followed.
In 2019, Klima took over Bottiglieria 1881 as head chef and co-owner, transforming what had previously been a wine-focused venue into one of the most talked-about names in Polish fine dining. Beyond the restaurant, he has earned international recognition, published a book and become familiar to a wider audience through his role as a judge on the Polish edition of MasterChef.
It is always a pleasure to visit a Krug Ambassade restaurant, where starting the evening with a glass of Krug Champagne feels almost obligatory. The welcome at Bottiglieria 1881 was warm and genuinely friendly, setting a relaxed tone from the outset.
Among the opening bites, one dish built around a morel mushroom stood out in particular. What remains most memorable was not the mushroom itself, but the remarkably delicate sauce in which it was served. Its flavour was so captivating that it took some restraint not to savour every last drop in a decidedly un-fine-dining manner. Throughout the menu, a noticeable freshness ran through several of the courses, bringing a sense of lightness and elegance to the experience.
Caviar appeared on a number of occasions during the meal. While its presence undoubtedly added a touch of luxury, it rarely felt essential. The underlying flavours and compositions were already strong enough to stand confidently on their own, making the caviar seem more like an embellishment than a necessity.
What is perhaps most interesting about Bottiglieria 1881 is that, despite the refinement and obvious technical precision on display, only a handful of details remained vividly memorable a few days later. The morel dish and the overall freshness of several courses linger in the mind, but much of the meal merges into a broader recollection of elegance and craftsmanship rather than a succession of individually unforgettable moments. Yet perhaps that, too, says something about the experience: a restaurant where the lasting impression is not one spectacular highlight, but a consistently polished and carefully orchestrated evening.
