in Marseille – France
Auffo is set in one of Marseille’s most emblematic coastal pockets, the Vallon des Auffes, a small fishing inlet carved into the rock just south of the Corniche. Perched directly on the edge of the water, the restaurant occupies a striking position at the entrance of the harbour, where traditional boats still rest and the Mediterranean defines every line of the landscape. Built into the rock itself, the space opens onto panoramic views of the sea, with the Château d’If and the Frioul islands visible in the distance. The setting creates a sense of immersion, where the boundary between the restaurant and its environment feels almost dissolved, shaped by light, wind and the constant presence of the shoreline.
The restaurant is led by chef Coline Faulquier, a figure who has emerged as a central presence in Marseille’s contemporary dining scene. Born in Burgundy and trained in Avignon before continuing her education in Paris, she followed a classical path through some of France’s most recognised kitchens. Early in her career, she worked at Le Bristol in Paris and later alongside Christophe Bacquié, building a foundation rooted in discipline and technical precision. Her trajectory also includes the opening of her first restaurant, Pergola, followed by Signature in Marseille, where she established her identity as an independent chef.
Her arrival at Auffo marked a new chapter. The restaurant opened in 2025, taking over the historic site previously occupied by L’Épuisette, a long-standing institution on the Marseille coastline. The transition was closely followed locally, as Faulquier brought her own vision to a location already deeply embedded in the city’s culinary heritage. Within a short time, the project established itself as a significant address in the evolving gastronomic landscape of Marseille.
Within this dramatic setting, the experience begins with a series of small gestures that immediately set the tone, including a particularly well-executed opening sequence of bites. As the meal unfolds, there are familiar elements that appear across the region, such as John Dory featured in a main course, yet here it does not create a sense of repetition, but rather continuity. A pre-dessert stands out as a highlight of the experience, providing a moment of contrast and refinement towards the end.
At the same time, certain aspects leave room for improvement. The absence of flexibility in the menu structure is noticeable, with all guests at the table required to follow the same menu, which can limit the sense of personalisation. The service, while precise, occasionally feels somewhat distant, lacking the warmth that might balance the austerity of the setting. Another striking point is the limited engagement around beverages. At no stage is there a proactive enquiry about wine preferences, nor are alternatives suggested for guests with specific requirements, leaving the impression that drinks are treated as a secondary consideration.
Taken together, Auffo presents a compelling combination of a powerful location, a chef with a strong and well-defined trajectory, and a setting that captures the spirit of Marseille’s coastline. At the same time, the experience highlights how, at this level, attention to flexibility, interaction and detail can shape the overall balance between place, intention and execution.
