Le Coq aux Champs

in Soheit-Tinlot – Belgium

Tucked away in the serene countryside of Soheit-Tinlot, Belgium, Le Coq aux Champs
has been a quiet fixture in the Condroz region since its founding in the 1970s. The name, which translates to *“the rooster in the fields,”* reflects both its rural setting and its enduring presence as a destination for those seeking something special beyond the city limits.

A new chapter began in 2003 when Christophe Pauly and his wife Catherine took the reins. Christophe, a native of the region, had already carved out a remarkable path in the culinary world. His early training under Daniel Van Lint at Le Pré Mondain instilled a deep respect for discipline and precision, while later experiences with renowned chefs such as Éric Martin and Michel Troisgros shaped his philosophy and approach. Catherine, equally committed, has been a driving force behind the restaurant’s evolution, helping to shape its identity and atmosphere.

Together, the Paulys have spent over two decades refining Le Coq aux Champs into a place that reflects their shared vision—one rooted in authenticity, simplicity, and a deep connection to their surroundings. Their story is not just about a restaurant, but about a partnership that continues to grow and inspire.

Yet, as with any celebrated institution, expectations run high. With a 17.5 rating on Gault & Millau, diners arrive anticipating brilliance. On a recent visit, however, the experience fell short of that lofty benchmark. While the food was certainly good, no single dish truly stood out. Even the signature creation felt subdued, its flavors flat rather than memorable.

The open kitchen, a feature that often adds transparency and charm, raised questions instead. Observing lettuce being packed into plastic and large amounts of red cabbage being shredded suggested preparation for days ahead rather than the immediacy of fine dining craft. For a restaurant of this caliber, such details can leave guests wondering about the balance between efficiency and artistry.

In the end, the visit left a lingering sense of hunger—not for quantity, but for the spark of creativity and distinction that one expects from a restaurant of Le Coq aux Champs’ reputation. The Paulys’ journey and dedication remain admirable, but the dining experience itself revealed a gap between history and expectation.
