in Lønstrup – Denmark
Perched on the edge of Denmark’s northwestern coastline, Villa Vest sits high above the North Sea in the small fishing village of Lønstrup. The setting is defined by shifting dunes, steep cliffs and a vast horizon where sea and sky meet, creating a sense of quiet isolation that feels both remote and deliberate. Arriving from inland, the landscape opens abruptly from flat farmland to a windswept coastline, where the restaurant appears almost as an extension of the terrain itself, built into the cliffside and overlooking the beach below. The property remains closely connected to Villa Vest Badehotel, reflecting the long-standing tradition of the area as a seaside retreat where life moves naturally between village, shoreline and dining room.
Despite this calm and contemplative setting, stepping inside Villa Vest reveals a different energy. The atmosphere contrasts the stillness outside, leaning more towards the lively, social feel of a Parisian brasserie, where conversation fills the room and the pace is slightly more animated than one might expect from such a remote location. This balance between dramatic coastal surroundings and a vibrant interior creates a dynamic tension that defines the overall experience.
The restaurant is owned by Kim Møller-Kjær, who runs Villa Vest together with his wife, Pernille Møller-Kjær. Their influence extends beyond the restaurant into the adjacent badehotel, shaping an experience where hospitality feels deeply rooted in the local environment. Pernille takes on a central role as host, setting the tone for the guest experience, while Kim oversees the broader operation of both the restaurant and the hotel, creating a unified vision that ties the entire property together.
In the kitchen, head chef Anders Holm Kiel Nielsen leads the work, bringing with him a strong connection to the region. Raised in nearby Hirtshals, he began his career locally before continuing his training abroad, including a formative period in London. Over the years, he has worked at several well-known restaurants, both in Denmark and internationally, building experience at places such as Molskroen, Brøndums Hotel in Skagen and Norsminde Kro, along with time at Comwell Kellers Park and the renowned restaurant The Fat Duck in England. His path reflects a steady progression through respected kitchens, combining international exposure with a consistent return to North Jutland.
His relationship with Villa Vest itself has unfolded over time, having previously led the kitchen before stepping away and later returning to take up the role again. This back-and-forth connection mirrors a broader narrative of returning to familiar ground, where professional experience and personal roots intersect.
During a recent visit, the experience reflected this contrast between setting and atmosphere. The salmon was refined and enjoyable, and the dessert provided a pleasant conclusion. However, it was noticeable how frequently butter and richer elements appeared throughout the courses. This was evident in smaller servings as well as in an additional dish resembling a pork-filled bitterball, and in the main course, which combined elements of land and sea. While the menu itself was limited in size, the overall impression leaned towards something heavier than expected. Even with a relatively short sequence of dishes, it felt more substantial than longer tasting menus experienced elsewhere, which tend to come across as lighter in comparison.
Together, the owners and the chef shape Villa Vest as more than a standalone destination. It is part of the wider rhythm of Lønstrup, a coastal town where landscape, people and place are closely intertwined, and where the contrast between tranquil surroundings and a lively dining room becomes part of the story itself.
