Pearl by Paul Proffitt

In Kruså – Denmark

On the edge of the Flensborg Fjord in southern Denmark, Pearl by Paul Proffitt welcomes guests into a setting where nature and craftsmanship meet in quiet harmony. Housed in a serene early twentieth century villa in Sønderhav, the restaurant looks out across the calm waters of the fjord, offering a view that immediately inspires a sense of stillness. It is the kind of place where the landscape becomes part of the dining experience, allowing guests to slow down and truly arrive.

Pearl is far more than a destination for refined cuisine. It represents the deeply personal journey of Chef Paul Proffitt, whose story begins in Staffordshire, England, in the warm and formative presence of his grandmother Shirley. Her love of cooking and her signature string of pearls left a lasting impression, inspiring not only the name of the restaurant but also its spirit. That sense of heritage, care, and connection continues to shape every aspect of the experience at Pearl.

Paul’s passion for the kitchen emerged early. By the age of twelve, he was already baking cakes for a neighbour’s café, discovering both the discipline and satisfaction of professional cooking. After training at the Birmingham College of Food, his career took him through Michelin starred kitchens across Europe, where he refined his technique and developed a clear culinary voice. In 2015, seeking a more balanced life for his young family, he relocated to Denmark with his wife and daughters. His time at Henne Kirkeby Kro as Head Chef spanned nine years and contributed to the restaurant achieving two Michelin stars, a milestone that speaks to both consistency and innovation.

With Pearl, Paul steps into his first solo venture, creating a restaurant that reflects not only his professional achievements but also his personal values. His wife has played an essential role in shaping the identity and atmosphere of the space, helping to craft an environment that feels both elegant and deeply welcoming. Together, they have built something that resonates on a human level, a restaurant rooted in family, resilience, and a desire to create something meaningful and enduring.

The experience at Pearl unfolds with a sense of quiet confidence. From the moment guests take in the sweeping view of the fjord, there is a natural transition into a more relaxed state of mind. This connection to the surroundings is echoed in the cuisine, where balance is at the forefront. Dishes are carefully composed, avoiding extremes while allowing each ingredient to express itself with clarity and precision. Rather than relying on bold contrasts, the kitchen focuses on harmony, creating plates that feel thoughtful and complete.

One particular dish that captures this philosophy is the monkfish, memorable for both its texture and depth of flavour. The fish itself offers a firm, almost meaty consistency, paired with an intensely flavoured carrot purée and complemented by freshly grated carrot that adds brightness and nuance. The sauce ties the dish together seamlessly, enhancing rather than overshadowing the natural qualities of the ingredients. It is a composition that lingers in the memory, not for dramatic flair, but for its refinement and balance.

Presentation at Pearl is equally considered. Both main courses and desserts reveal a strong sense of structure and design, where each element is placed with intention. There is an architectural quality to the plating, a visual clarity that mirrors the precision found in the flavours. It is evident that every dish has been carefully thought through, offering a dialogue between aesthetics and taste.

Beyond the plate, Pearl also speaks to those with an appreciation for art. The interior features a curated selection of works by Danish artists, adding another layer to the overall experience. These pieces contribute to the atmosphere without overwhelming it, inviting guests to engage with the space in a more reflective way. The combination of art, design, and cuisine creates a setting that feels cohesive and quietly inspiring.

Pearl by Paul Proffitt is ultimately a place where stories come together. The story of a chef shaped by early memories and years of dedication, the story of a family building something together, and the story of a location that offers both beauty and tranquillity. For guests, it becomes a moment to pause, to savour, and to connect with a form of dining that values balance, authenticity, and a genuine sense of place.
