De Cuijt Mierlo: Local Produce Meets Korean Influences

Nestled along the peaceful banks of the Eindhovensch Kanaal, De Cuijt Mierlo has quickly established itself as one of the most interesting fine dining destinations in the region. The historic location, surrounded by greenery and water, offers a tranquil setting just outside Eindhoven and Helmond. The combination of a rich local history and a contemporary culinary vision makes De Cuijt Mierlo a restaurant worth seeking out.

At the helm is chef-owner Koen van Weert, a Mierlo native who returned to his hometown after building experience in some of Europe’s most respected fine dining kitchens. His professional journey included time at renowned Michelin-starred restaurants such as De Lindehof in Nuenen and Jordnær in Copenhagen. Together with his partner, chef Yukyung “Yuki” Lee, he has transformed this historic location into a restaurant that reflects both local roots and international influences.

Yuki Lee plays an equally important role in the identity of De Cuijt Mierlo. The couple met while working in Copenhagen’s acclaimed gastronomic scene and have since combined their experience and backgrounds into a shared vision. Their partnership is evident throughout the restaurant, where Dutch traditions and South Korean influences are brought together in a natural and authentic way.

The meal started with a pleasant selection of amuse-bouches, including a crispy bite paired with beef tartare. From the very beginning, the kitchen’s passion for fresh products was apparent. A strong emphasis is placed on local Dutch produce, sourced from nearby suppliers and complemented by ingredients from the restaurant’s own garden. This commitment to local sourcing forms the foundation of the restaurant’s culinary philosophy.

What makes De Cuijt Mierlo distinctive is the integration of Korean influences into local Dutch produce. South Korean herbs, spices and flavour accents are carefully combined with seasonal ingredients from the surrounding region. Rather than relying on complexity for its own sake, the kitchen prefers pure preparations that allow the ingredients to remain at the centre of attention. Freshness, honesty and respect for the product are recurring themes throughout the experience.

The menu showcased a number of refreshing flavour combinations and highlighted the quality of the ingredients being used. The focus on honest cooking and pure preparations creates a clear and recognisable style that reflects the personalities of both chefs.

That being said, some dishes left us wanting a little more intensity. For our personal taste, the menu could have benefited from greater depth and slightly bolder seasoning. Given the Korean influences present throughout the restaurant’s identity, we occasionally expected a touch more spice and stronger flavour contrasts. While the dishes were carefully composed, several courses felt somewhat restrained.

One notable example was a dish featuring caviar. While caviar can be an excellent addition when it contributes complexity and enhances the overall balance of a dish, in this case its impact on the flavour profile felt limited. As a result, the ingredient appeared to add more luxury than actual value to the dish itself.

Despite these observations, De Cuijt Mierlo remains a fascinating fine dining destination. The combination of local Dutch produce, Korean influences, fresh ingredients and the vision of chefs Koen van Weert and Yuki Lee creates a restaurant with a distinct identity. Set within a beautiful historic location, it offers an experience that is firmly rooted in Mierlo while drawing inspiration from the wider culinary world.
