# Le Roannay
## Francorchamps – Belgium
Le Roannay is a restaurant that has long been intertwined with the rich heritage of Francorchamps, a village best known for its legendary racing circuit. Originally founded as a classic roadside inn, it has evolved over the years, adapting to changing times while maintaining a deep connection to its roots. Located just a short distance from the Circuit de Spa-Francorchamps, the restaurant has welcomed travelers, racing enthusiasts, and fine-dining seekers alike, offering an experience shaped by its surroundings.
In recent years, Le Roannay has undergone a transformation, guided by talented chefs dedicated to refining its identity. Under the supervision of David Martin, the acclaimed chef behind La Paix in Anderlecht, the kitchen is led by Mathieu Vande Velde. In just a year, Mathieu earned his own Michelin star and was recognized as the Young Chef of the Year 2023. His rapid rise in the culinary world has brought fresh energy to Le Roannay, marking it as a place to watch.
Upon arriving for a lunch service, the experience felt somewhat unusual—being the only table in such a restaurant created an unexpected atmosphere. Despite the solitude, the staff remained attentive, though conversations revealed a surprising lack of familiarity with some of Belgium’s renowned fine-dining figures. This was an interesting contrast, given the restaurant’s aspirations within the gastronomic scene.
Later in the meal, Chef Mathieu took the time to engage in a conversation about one of his new dishes, showing genuine curiosity about the perspectives of his guests. The ability to listen and adapt is a crucial trait for any chef, and this willingness to engage directly hints at a bright future for both him and the restaurant.
Le Roannay is a place in transition, evolving under the hands of a promising young chef. While its current state may leave room for growth, it is certainly worth revisiting in the coming years to witness how it develops. With time, refinement, and experience, the restaurant may very well establish itself as a lasting name in Belgium’s fine-dining landscape.
