in Brussels – Belgium
Tucked inside Brussels’ iconic Centre for Fine Arts, Bozar Restaurant is more than a place to dine—it’s a tribute to craftsmanship, culture, and quiet ambition. The building itself, designed by the legendary architect Victor Horta and inaugurated in 1928, stands as a monument to Art Deco elegance and artistic inclusivity. It was conceived as a space where all forms of art could coexist, and today, that spirit lives on in the restaurant nestled within its walls.
Bozar Restaurant was brought to life by Armenian-born chef Karen Torosyan, whose journey to culinary prominence is as layered and precise as the dishes he creates. Born in Georgia to Armenian parents, Torosyan arrived in Brussels at 18, speaking no French and armed only with determination. He began as a dishwasher in a local brasserie, slowly working his way up through the ranks of Belgium’s fine dining scene. His formative years were spent under the guidance of culinary icons like Jean-Pierre Bruneau, and later at renowned establishments such as Comme Chez Soi, Sea Grill, and Bon-Bon.
Torosyan’s passion for pastry and precision led him to specialize in intricate preparations like pâté en croûte, earning him the title of World Champion in 2015. But accolades were never the end goal. In 2018, he took full ownership of Bozar Restaurant, transforming it into a reflection of his philosophy: discipline, authenticity, and respect for tradition. Alongside him is his wife and executive cheffe, Cassandre Ercolini, whose own culinary finesse and quiet strength help shape the restaurant’s identity. Together, they’ve built a space where technique meets soul, and where every detail is treated with reverence. Their story is one of resilience, artistry, and a shared devotion that continues to evolve within the historic heart of Brussels.
