essência

in Budapest – Hungary

Just Steps from the Basilica, a Culinary Gem Awaits
Just around the corner from Budapest’s iconic Basilica, Essência is more than a restaurant—it’s a love letter to heritage, hospitality, and haute cuisine. Founded in 2020 by Portuguese chef Tiago Sabarigo and his Hungarian wife Éva, this intimate fine dining destination fuses two worlds into one unforgettable experience. The name itself—Essência—speaks volumes: it’s about essence, memory, and the soulful blending of cultures.

A Chef’s Journey Across Europe, A Story Told Through Flavor
Tiago’s culinary path began in Portugal, where he trained in prestigious kitchens before refining his craft across Europe, including London and Budapest. His cooking is precise yet imaginative, rooted in tradition but always reaching for something new. Éva, with her deep understanding of hospitality and design, brings warmth and elegance to the space. Together, they’ve created a restaurant that feels both worldly and personal—a reflection of their shared story.

Hospitality That Goes Beyond the Plate
What truly sets Essência apart is the way it treats its guests—not merely as patrons, but as participants in a thoughtful, sensory experience. The staff are attentive and intuitive, guiding diners through the menu with care. If you’re unfamiliar with an ingredient, they’ll gladly show you a photo or explain its origin. It’s this kind of detail that transforms a meal into a dialogue.

Non-Alcoholic Pairings with Real Integrity
For those with dietary restrictions, the team’s sensitivity is exceptional. As someone who avoids alcohol entirely, I often encounter confusion when it comes to “alcohol-free” drinks—many of which are simply de-alcoholized versions of spirits. At Essência, the staff proactively addressed this nuance and curated pairings that were truly alcohol-free, not just technically so. That level of understanding is rare, and deeply appreciated.

Transparency and Flexibility in the Tasting Menu
The tasting menu offers a degree of flexibility, and the kitchen’s transparency is refreshing. After choosing octopus as my starter, the staff returned to inform me that the dish had been sous-vide with red wine—potentially leaving trace amounts of alcohol. They offered an alternative without hesitation, and I gladly accepted. The replacement—langoustine atop a squid ink tartlet with seaweed and a whisper of lemon—was sublime. The citrus added a surprising brightness that elevated the dish beautifully.

Inventive Dishes That Surprise and Delight
Essência’s creativity shines in every course. Take the beef tartare, for example: served with brioche and bone marrow butter, it’s a familiar dish reimagined with depth and indulgence. Or the tartare-style sauce paired with tempura corn—unexpected, yet perfectly balanced.

A Main Course to Remember
The main course was a revelation: saddle of deer with summer squash and dill. The venison was so tender, my knife slid through it like butter. I’ve had venison many times, but never like this.

Hungary’s Fine Dining Scene Is Blossoming
Interestingly, only about 20% of Essência’s guests are Hungarian. As one of the staff noted, the fine dining scene in Hungary is still in its infancy. But if Essência is any indication, it’s maturing quickly—and with remarkable grace.

Final Thoughts: A Restaurant That Feeds the Soul
Essência isn’t just a place to eat; it’s a place to feel. It’s where culinary technique meets emotional intelligence, where hospitality becomes storytelling. Whether you’re a seasoned gourmand or simply curious, Essência invites you to taste not just food, but the essence of two lives beautifully intertwined.
